Please check this article for the way to update the software. If your printer is using AirPrint, or you have the updated file from Epson, the article will assist you. Otherwise, the article states to have your printer connected and check for the update in the App Store: macOS Sierra: Update or change printer software
Update your printer software
If your printer isn’t using AirPrint, you can use Software Update to download the latest software. If you don’t do this, you may see a message that software isn’t available when you connect your printer.
Choose Apple menu > App Store, then click Updates.
Install any software updates listed for your printer.
If software for your printer isn’t available using Software Update, you can contact the manufacturer for information. It may be that your printer isn’t compatible with macOS. To check, see the Apple Support article Printer and scanner software available for download.
If you install printer software that you didn’t get from Apple, your printer’s software may not be updated automatically when you use Software Update.
I understand the title still shows for macOS Sierra, but the process is the same in High Sierra. Thanks and have a wonderful day.

You already did everything reasonable to isolate the problem; in fact you exhausted nearly every potential cause. The only comment I have is to use AirPrint to the extent possible, since it is the only method Apple will unequivocally stand behind and support. If AirPrint doesn't result in 100% reliability, Apple would refer you to both the printer and wireless router's respective manufacturers for the possibility of firmware updates that could resolve the problems.
The fact the problem has persisted since Snow Leopard strongly suggests an underlying cause beyond your Macs, and installing new (non-AirPrint) printer queues isn't likely to help. Since it involves multiple Macs and multiple printers, the only remaining component common to all your devices—and most likely to be responsible—is the router.

A static IP address is a very good idea. If it should occur again, determine if you can ping the printers. Use Terminal or Network Utility. Most likely, you will get either 'request timeout' or 'no route to host'. Each one suggests different causes, so report your result.

Needless to say, if you are using any non-Apple 'anti-virus', 'cleaning', or 'Internet security' junk, anything at all in that broad category of useless garbage, don't. A lot of things won't work if you do.
